Ingredients

- 2 medium zucchinis
- 1 teaspoon salt
- 1/2 cup breadcrumbs
- 1/4 cup grated smoked scamorza cheese
- 2 eggs
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 1/4 cup olive oil (for frying)
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let it sit for 10 minutes.
- After 10 minutes, squeeze out excess water from the grated zucchini.
- Mix in the breadcrumbs, smoked scamorza, eggs, parsley, and black pepper.
- Form the mixture into patties.
- Heat olive oil in a pan over medium heat.
- Fry the patties until golden brown, about 4-5 minutes on each side.
- Remove from the pan and let them drain on paper towels.

- For a gluten-free option, use gluten-free breadcrumbs.
