Ingredients

  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/4 cup grated smoked scamorza cheese
  • 2 eggs
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil (for frying)


Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let it sit for 10 minutes.
  3. After 10 minutes, squeeze out excess water from the grated zucchini.
  4. Mix in the breadcrumbs, smoked scamorza, eggs, parsley, and black pepper.
  5. Form the mixture into patties.
