  • 1 package vegan pie crusts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 bell pepper, diced
  • 1 cup peas
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh cilantro, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Add garlic and ginger, cooking for another minute.
  4. Stir in bell pepper, peas, and diced potatoes. Cook until potatoes are tender.
  5. Add cumin, coriander, turmeric, garam masala, chili powder, and salt. Mix well and cook for another 2-3 minutes.
  6. Remove from heat and stir in fresh cilantro.
  7. Roll out one pie crust and place it in a pie dish. Fill with the vegetable mixture.
  8. Cover with the second pie crust, sealing the edges. Cut slits on top for steam to escape.
  9. Bake for 30-35 minutes, until golden brown.
  10. Let cool for a few minutes before slicing and serving.
