Ingredients

  • 4 veal shanks
  • 1 cup white wine
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can of diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaves
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season veal shanks with salt and pepper, then brown on all sides.
  3. Add onion, carrots, celery, and garlic, cooking until softened.
  4. Pour in white wine and simmer until reduced.
  5. Add tomatoes, beef broth, thyme, and bay leaves.
  6. Cover and cook on low heat for 2-3 hours, until meat is tender.
  7. Serve with gremolata and risotto.
