- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons lemon zest
- ¼ cup fresh lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the butter and cream cheese together until smooth. Gradually add the sugar and mix until fluffy.
- Add the eggs, lemon zest, and lemon juice to the butter mixture, mixing well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For an extra zesty flavor, add more lemon zest.
- This loaf can also be made in mini loaf pans for individual servings.
