Description

Ingredients

  • 1 pound Great Northern beans
  • 2 smoked turkey necks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup cornmeal
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 large egg
  • 2 tablespoons vegetable oil


Instructions

  1. Soak the Great Northern beans overnight in water.
  2. Drain and rinse the beans, then add them to a large pot with the smoked turkey necks, onion, garlic, chicken broth, black pepper, salt, and cayenne pepper.
  3. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until the beans are tender.
  4. In a separate bowl, mix together the cornmeal, buttermilk, flour, egg, and vegetable oil until combined.
  5. Heat a skillet over medium heat and pour in batter to form hoecakes. Cook until golden brown on both sides.
  6. Serve the beans with smoked turkey necks alongside hot hoecakes.
