Ingredients

- 2 cups grated zucchini
- 1 cup turkey bacon, cooked and chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
Instructions
- In a large bowl, mix the grated zucchini, turkey bacon, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper.
- Form mixture into patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for 4-5 minutes on each side or until golden brown.
- Remove from skillet and drain on paper towels.
- Serve warm.
Notes
- For extra flavor, add chopped fresh herbs such as parsley or basil.
- These patties can be served with a yogurt sauce for dipping.
