Description

A delicious Tuscan shrimp orzo dish that is quick and easy to prepare, perfect for a weeknight meal.


Ingredients

  • 8 ounces orzo pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add garlic and red pepper flakes, sauté for 30 seconds.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Stir in cherry tomatoes and cook for another 2 minutes.
  5. Add cooked orzo, spinach, feta cheese, lemon juice, salt, and pepper. Mix well and cook until spinach is wilted.
  6. Serve warm and enjoy!
