A delicious Tuscan shrimp orzo dish that is quick and easy to prepare, perfect for a weeknight meal.

- 8 ounces orzo pasta
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1 teaspoon garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add garlic and red pepper flakes, sauté for 30 seconds.
- Add shrimp and cook until pink, about 3-4 minutes.
- Stir in cherry tomatoes and cook for another 2 minutes.
- Add cooked orzo, spinach, feta cheese, lemon juice, salt, and pepper. Mix well and cook until spinach is wilted.
- Serve warm and enjoy!
