Description

Ingredients

  • 3 pounds beef chuck roast
  • 2 dried guajillo chiles
  • 1 dried ancho chile
  • 1 teaspoon cumin seeds
  • 1 teaspoon oregano
  • 4 cloves garlic
  • 1 onion, quartered
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar
  • Salt to taste


Instructions

  1. Toast the guajillo and ancho chiles in a dry skillet until fragrant.
  2. Blend the toasted chiles with cumin, oregano, garlic, onion, and a cup of beef broth until smooth.
  3. In a large pot, combine the beef, the blended sauce, remaining beef broth, and apple cider vinegar.
  4. Bring to a boil, reduce heat, and simmer for about 2-3 hours until the meat is tender.
  5. Shred the beef and serve in bowls with broth and toppings of your choice.
