- 3 pounds beef chuck roast
- 2 dried guajillo chiles
- 1 dried ancho chile
- 1 teaspoon cumin seeds
- 1 teaspoon oregano
- 4 cloves garlic
- 1 onion, quartered
- 4 cups beef broth
- 2 tablespoons apple cider vinegar
- Salt to taste
Instructions
- Toast the guajillo and ancho chiles in a dry skillet until fragrant.
- Blend the toasted chiles with cumin, oregano, garlic, onion, and a cup of beef broth until smooth.
- In a large pot, combine the beef, the blended sauce, remaining beef broth, and apple cider vinegar.
- Bring to a boil, reduce heat, and simmer for about 2-3 hours until the meat is tender.
- Shred the beef and serve in bowls with broth and toppings of your choice.
