Description

A refreshing pasta salad that combines the rich flavors of tortellini and turkey bacon, perfect for a healthy meal or side dish.


Ingredients

  • 1 pound cheese tortellini
  • 6 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside to cool.
  2. In a large skillet, cook the turkey bacon until crispy. Remove from the skillet and crumble once cooled.
  3. In a large bowl, combine the cooked tortellini, turkey bacon, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegetarian version, you can omit the turkey bacon or substitute with a plant-based alternative.
