- 1 pound cheese tortellini
- 6 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions. Drain and set aside to cool.
- In a large skillet, cook the turkey bacon until crispy. Remove from the skillet and crumble once cooled.
- In a large bowl, combine the cooked tortellini, turkey bacon, cherry tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a vegetarian version, you can omit the turkey bacon or substitute with a plant-based alternative.
- Feel free to add other vegetables such as bell peppers or spinach for added nutrition.
