Description
This King Ranch Casserole is a creamy, cheesy Tex-Mex classic layered with tortillas, chicken, and a flavorful sauce.

- 2 tbsp butter
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (10 oz) cream of chicken soup
- 1 can (10 oz) cream of mushroom soup
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1 tsp chili powder
- ½ tsp cumin
- Salt and pepper, to taste
- 2½ to 3 cups cooked, shredded chicken
- 2 cups shredded cheddar cheese (or Mexican blend)
- 12 corn tortillas, torn into pieces
- Fresh cilantro or green onions, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, melt butter and sauté onion and bell pepper until soft. Add garlic and cook 1 more minute.
- Add soups, Rotel, chili powder, cumin, salt, and pepper. Stir in chicken and simmer briefly.
- In baking dish, layer ⅓ tortillas, ½ chicken mixture, and ⅓ cheese. Repeat layers, ending with cheese.
- Cover with foil and bake for 25 minutes. Uncover and bake 10–15 minutes more until bubbly and golden.
- Let sit 5–10 minutes before serving. Garnish as desired.
Notes
- Use rotisserie chicken for a quicker version.
- Spice it up with hot Rotel or jalapeños.
- Can be assembled a day ahead and refrigerated before baking.
