Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon red curry paste
  • 1 can (14 oz) coconut milk
  • 3 cups vegetable broth
  • 8 oz rice noodles
  • 1 pound shrimp, peeled and deveined
  • 2 cups spinach
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the onion and sauté until translucent.
  2. Stir in the garlic and ginger, cooking for another minute until fragrant.
  3. Add the red curry paste and stir to combine with the onions.
  4. Pour in the coconut milk and vegetable broth, bringing the mixture to a boil.
  5. Add the rice noodles and cook according to package instructions until tender.
  6. Stir in the shrimp and spinach, cooking until the shrimp are pink and cooked through.
  7. Remove from heat and add the lime juice. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicy kick, add more red curry paste or chili flakes.
