- 1 pound ground chicken
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 bell pepper, finely chopped
- 1 carrot, grated
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 heads of butter lettuce, leaves separated
- 1/4 cup chopped green onions
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add the ground chicken and cook until browned, breaking it apart as it cooks.
- Stir in the bell pepper and carrot, and cook for another 3-4 minutes.
- Pour in the soy sauce, sesame oil, and rice vinegar, and mix well.
- Remove from heat and allow to cool slightly.
- Serve the chicken mixture in butter lettuce leaves, topped with chopped green onions.
Notes
- Feel free to add other veggies like mushrooms or zucchini for extra texture.
