Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bell pepper, finely chopped
  • 1 carrot, grated
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 heads of butter lettuce, leaves separated
  • 1/4 cup chopped green onions


Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the ground chicken and cook until browned, breaking it apart as it cooks.
  4. Stir in the bell pepper and carrot, and cook for another 3-4 minutes.
  5. Pour in the soy sauce, sesame oil, and rice vinegar, and mix well.
  6. Remove from heat and allow to cool slightly.
  7. Serve the chicken mixture in butter lettuce leaves, topped with chopped green onions.
