Ingredients

  • 1 head cauliflower, chopped
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until softened.
  3. Add ground beef to the skillet and cook until browned.
  4. Stir in cauliflower, black beans, corn, salsa, chili powder, and cumin. Cook for about 5 minutes.
  5. Transfer the mixture to a baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
  7. Let it cool slightly before serving.
