- 1 head cauliflower, chopped
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until softened.
- Add ground beef to the skillet and cook until browned.
- Stir in cauliflower, black beans, corn, salsa, chili powder, and cumin. Cook for about 5 minutes.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
- Let it cool slightly before serving.

- For added flavor, consider garnishing with fresh cilantro.
