- 4 slices bread
- 1 cup fresh spinach
- 1/2 cup ricotta cheese
- 1/3 cup sun-dried tomatoes, chopped
- 4 tablespoons butter
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Spread garlic powder, salt, and pepper onto one side of each slice of bread.
- On the unseasoned side, spread a layer of ricotta cheese.
- Add spinach and sun-dried tomatoes on top of the ricotta.
- Top with another slice of bread, seasoned side out, to form a sandwich.
- Heat a skillet over medium heat and add butter.
- Once melted, place the sandwich in the skillet and grill for about 3-4 minutes on each side, until golden brown and crispy.
- Remove from heat, slice, and serve warm.
Notes
- For extra flavor, consider adding mozzarella cheese.
