This Sun-Dried Tomato & Mushroom Pasta in Garlic Basil Sauce is a delicious and easy meatless dish, perfect for any weeknight dinner.

- 8 ounces pasta of choice
- 1 cup sun-dried tomatoes, chopped
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- ½ cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Add sun-dried tomatoes and mushrooms. Cook for 5-7 minutes until mushrooms are tender.
- Toss in the cooked pasta, fresh basil, salt, black pepper, and red pepper flakes. Mix well.
- Serve warm, garnished with extra basil if desired.
Notes
- For a creamier sauce, add a splash of heavy cream or a dollop of cream cheese.
