Description

This Sun-Dried Tomato & Mushroom Pasta in Garlic Basil Sauce is a delicious and easy meatless dish, perfect for any weeknight dinner.


Ingredients

  • 8 ounces pasta of choice
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add garlic and sauté until fragrant, about 1 minute.
  4. Add sun-dried tomatoes and mushrooms. Cook for 5-7 minutes until mushrooms are tender.
  5. Toss in the cooked pasta, fresh basil, salt, black pepper, and red pepper flakes. Mix well.
  6. Serve warm, garnished with extra basil if desired.
