Description
A delightful summer cake filled with fresh berries and topped with a sweet cream cheese frosting.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2 cups mixed summer berries (strawberries, blueberries, raspberries)
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, combine the flour and baking powder.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk.
- Fold in the mixed berries gently.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely in the pan.
- For the frosting, beat the cream cheese and powdered sugar until smooth.
- Spread the cream cheese frosting over the cooled cake before serving.
