- 1 cup rice
- 2 cups cooked chicken, shredded
- 1 cup corn, fresh or frozen
- 1 cup black beans, drained and rinsed
- 1/2 cup feta cheese, crumbled
- 2 avocados, diced
- 1 lime, juiced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/4 cup cilantro, chopped
Instructions
- Cook the rice according to package instructions.
- In a large bowl, combine the cooked chicken, corn, black beans, feta cheese, diced avocados, lime juice, chili powder, cumin, and cilantro.
- Once the rice is cooked, add it to the bowl and mix all ingredients well.
- Serve immediately or refrigerate for later.
