- 1 cup cottage cheese
- 1 ripe banana
- 1 cup strawberries, chopped
- 1/2 cup oats
- 1/4 cup honey
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, mashed banana, honey, lemon juice, and vanilla extract.
- Add the oats, baking powder, and salt. Mix until well combined.
- Fold in the chopped strawberries gently.
- Drop spoonfuls of the mixture onto a prepared baking sheet.
- Bake for 15-20 minutes or until lightly golden.
- Let cool before serving.
Notes
- For added flavor, you can add some lemon zest.
- These cookies can be enjoyed warm or cold.
