- 2 large eggs

- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

- Add eggs one at a time, mixing well after each addition. Stir in lemon zest, juice, and vanilla.

- Bake for 50-60 minutes or until a toothpick comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
