Ingredients

  • 2 cups frozen spinach (thawed and drained)
  • 3 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 1/4 cup flour (optional)
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Sauté chopped onions and garlic in butter until softened.
  3. In a large bowl, combine spinach, eggs, cheeses, sautéed vegetables, flour, and seasoning.
  4. Mix thoroughly and transfer to the baking dish. Smooth the top evenly.
  5. Bake for 35–45 minutes until golden and set. Let rest 10 minutes before serving.

  • Use ricotta instead of cottage cheese for a richer flavor.
  • Add cooked mushrooms or bell peppers for extra texture.
