  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1 cup brown sugar

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, and mix until smooth. Stir in the vanilla extract and chopped pecans.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
