Description

A delightful twist on traditional cornbread, these Southern-Style Honey Butter Cornbread Poppers are easy to make and perfect for any occasion.


Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup honey butter, for serving


Instructions

  1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, melted butter, eggs, and honey.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the mini muffin tin with the batter, about 2/3 full.
  6. Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before serving with honey butter.

Notes

  • For a sweeter popper, add more honey to the batter.
  • These poppers can also be made with gluten-free flour.
