A delightful twist on traditional cornbread, these Southern-Style Honey Butter Cornbread Poppers are easy to make and perfect for any occasion.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup honey
- 1/2 cup honey butter, for serving
Instructions
- Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, combine milk, melted butter, eggs, and honey.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill the mini muffin tin with the batter, about 2/3 full.
- Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving with honey butter.
Notes
- For a sweeter popper, add more honey to the batter.
- These poppers can also be made with gluten-free flour.
