Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 tablespoons tomato paste
- Salt and pepper to taste
Instructions
- In the slow cooker, combine the beef, broth, carrots, potatoes, onion, garlic, Worcestershire sauce, thyme, and tomato paste.
- Season with salt and pepper to taste.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
- Adjust seasoning if necessary before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir it into the stew in the last 30 minutes of cooking.
- Serve with crusty bread for a complete meal.
