- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 large carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a large bowl, season the beef pieces with salt and pepper.
- Heat a skillet over medium-high heat and brown the beef chunks on all sides.
- Transfer the browned beef to the slow cooker.
- Add the carrots, potatoes, onion, and garlic to the slow cooker.
- In a separate bowl, mix the broth, tomato paste, thyme, rosemary, and Worcestershire sauce, then pour it over the beef and vegetables.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- Adjust seasoning before serving.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
- Feel free to add your favorite vegetables like peas or green beans.
