Ingredients

  • 2 cups milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 cup shredded cheese
  • 1 cup cooked seafood (shrimp, crab, or a mix)
  • 1 tablespoon butter
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell peppers
  • 1 tablespoon lemon juice


Instructions

  1. In a bowl, mix flour, milk, eggs, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a small amount of batter, spreading it evenly.
  3. Cook for 2-3 minutes until golden, then flip and cook the other side.
  4. Repeat with remaining batter, stacking the crepes on a plate.
  5. In a separate pan, melt butter and sauté onions and bell peppers until soft.
  6. Add seafood and lemon juice, cooking until heated through.
  7. Place a spoonful of the seafood mixture on each crepe, sprinkle cheese on top, and fold.
  8. Serve warm, garnished with additional cheese if desired.
