Ingredients

  • 1 pound Italian sausage
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale, chopped
  • 1 tablespoon olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sausage and cook until browned.
  3. Stir in the onion and garlic, and cook until softened.
  4. Add the chicken broth, white beans, diced tomatoes, thyme, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the kale and cook for an additional 5 minutes until wilted.
