- 1 pound Italian sausage
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cans white beans, drained and rinsed
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sausage and cook until browned.
- Stir in the onion and garlic, and cook until softened.
- Add the chicken broth, white beans, diced tomatoes, thyme, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the kale and cook for an additional 5 minutes until wilted.
- Serve warm with crusty bread.
