- 4 slices turkey bacon, diced
- 4 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 cups French bread, toasted and cubed
- 1 cup Gruyere cheese, shredded
Instructions
- In a large pot, heat olive oil and cook the diced turkey bacon until crispy.
- Add the sliced onions and salt, cooking until the onions are caramelized.
- Pour in the beef broth and bring to a simmer.
- Once simmering, add black pepper and let cook for 15 minutes.
- Serve the soup in bowls, topped with toasted bread and shredded Gruyere cheese.
- Broil in the oven until the cheese is melted and bubbly.
