- 1 cup diced onions
- 1 cup vinegar

Instructions
- In a large pot, combine the diced bell peppers, onions, vinegar, sugar, salt, and black pepper.
- Bring the mixture to a boil over medium heat.
- Reduce heat and let simmer for 10 minutes.
- Remove from heat and let cool slightly.
- Transfer the relish to sterilized jars and seal tightly.
