A delicious combination of creamy cheesecake and sweet peach cobbler.

- 1 ½ cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh peaches, sliced
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the crust in the springform pan.
- In another bowl, combine sliced peaches, brown sugar, cinnamon, and cornstarch. Mix until the peaches are evenly coated.
- Layer the peach mixture over the cheesecake batter.
- Bake the cheesecake for about 60-70 minutes, or until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool before refrigerating for at least 4 hours.
- Serve chilled and enjoy!
Notes
- For extra flavor, try adding a hint of nutmeg to the peach mixture.
- Serve with whipped cream for added indulgence.
