- 2 cups fresh peaches, diced
- 1 teaspoon cinnamon
- 1 cup peach preserves
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter, and press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla and almond extract.
- Fold in diced peaches and cinnamon, then pour the mixture over the crust.
- Bake for 45-50 minutes, or until the center is set.
- Allow to cool, then top with peach preserves before serving.
Notes
- For a richer flavor, use ripe peaches.
- Let the cheesecake cool completely before slicing.
