- 4 large potatoes
- 200 grams gambas (shrimp)
- 3 cloves garlic, minced
- 100 grams mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Wash the potatoes and bake them in the oven for about 45 minutes or until tender.
- In a skillet, heat olive oil over medium heat and sauté the minced garlic for 1-2 minutes.
- Add the gambas to the skillet, sprinkle paprika, salt, and pepper, and cook until the shrimp are pink.
- Once the potatoes are cool, cut them in half and scoop out a bit of the flesh to create room for the filling.
- Mix the scooped potato with the shrimp and half of the cheese.
- Fill the potato halves with the shrimp mixture and top with the remaining cheese.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
