Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 tablespoons orange zest
  • 1/4 cup freshly squeezed orange juice


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Add in the eggs, vanilla extract, orange zest, and orange juice, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and stir until just combined.
  6. Fill the muffin cups about two-thirds full and bake for 20-25 minutes, or until a toothpick comes out clean.
  7. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

  • For an extra touch, add a glaze made from powdered sugar and orange juice on top after the muffins have cooled.
