- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 tablespoons orange zest
- 1/4 cup freshly squeezed orange juice
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Add in the eggs, vanilla extract, orange zest, and orange juice, mixing well.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and stir until just combined.
- Fill the muffin cups about two-thirds full and bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
- For an extra touch, add a glaze made from powdered sugar and orange juice on top after the muffins have cooled.
