Description
This old-fashioned potato salad is a delightful mix of creamy flavors, enhanced by turkey bacon and chicken ham.
Ingredients

- 2 pounds potatoes
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup celery, chopped
- 1/4 cup red onion, diced
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a large bowl, combine the mayonnaise, mustard, celery, red onion, and hard-boiled eggs.
- Once the potatoes are cool, chop them and add to the bowl along with the chicken ham and turkey bacon pieces.
- Gently mix until well combined. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a creamier salad, you can add more mayonnaise.
- Feel free to substitute the chicken ham for your favorite deli meat.
