Description

This old-fashioned potato salad is a delightful mix of creamy flavors, enhanced by turkey bacon and chicken ham.


Ingredients

Scale
  • 2 pounds potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, diced
  • 2 hard-boiled eggs, chopped
  • Salt and pepper to taste


Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine the mayonnaise, mustard, celery, red onion, and hard-boiled eggs.
  4. Once the potatoes are cool, chop them and add to the bowl along with the chicken ham and turkey bacon pieces.
  5. Gently mix until well combined. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For a creamier salad, you can add more mayonnaise.
  • Feel free to substitute the chicken ham for your favorite deli meat.
