Description

Ingredients

  • 2 cups warm water
  • 1 packet active dry yeast
  • 1/4 cup granulated sugar
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 egg (beaten)
  • 3 cups mozzarella cheese (cubed)


Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Allow it to sit for 5 minutes until frothy.
  2. Add the flour and salt to the yeast mixture, and knead until smooth.
  3. Let the dough rise in a warm place for 1 hour.
  4. Preheat the oven to 450°F (232°C) and prepare a baking sheet lined with parchment paper.
  5. Divide the dough into equal portions and flatten each piece, placing a cube of mozzarella in the center.
  6. Wrap the dough around the cheese and shape into pretzels.
  7. Boil water with baking soda and briefly boil each pretzel for 30 seconds.
  8. Place the pretzels on the baking sheet, brush with beaten egg, and bake for 12-15 minutes until golden brown.

Notes

  • For extra flavor, sprinkle with coarse sea salt before baking.
