Ingredients

- 2 cups warm water
- 1 packet active dry yeast
- 1/4 cup granulated sugar
- 5 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup baking soda
- 1 egg (beaten)
- 3 cups mozzarella cheese (cubed)
Instructions
- In a mixing bowl, combine warm water, yeast, and sugar. Allow it to sit for 5 minutes until frothy.
- Add the flour and salt to the yeast mixture, and knead until smooth.
- Let the dough rise in a warm place for 1 hour.
- Preheat the oven to 450°F (232°C) and prepare a baking sheet lined with parchment paper.
- Divide the dough into equal portions and flatten each piece, placing a cube of mozzarella in the center.
- Wrap the dough around the cheese and shape into pretzels.
- Boil water with baking soda and briefly boil each pretzel for 30 seconds.
- Place the pretzels on the baking sheet, brush with beaten egg, and bake for 12-15 minutes until golden brown.
Notes
- For extra flavor, sprinkle with coarse sea salt before baking.
- These pretzels can be served with marinara sauce for dipping.
