Mini meatloaf muffins made with turkey and bacon served with creamy mashed potatoes for a delightful meal.
Ingredients

- 1 pound ground turkey
- 4 slices turkey bacon, chopped
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/4 cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mashed potatoes
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground turkey, chopped turkey bacon, breadcrumbs, onion, milk, egg, Worcestershire sauce, salt, and pepper.
- Mix well until combined and form into muffin shapes.
- Place the muffins in a greased muffin tin.
- Bake for 25-30 minutes or until cooked through.
- While the muffins are baking, prepare the mashed potatoes according to package instructions or your favorite recipe.
- Serve the muffins hot alongside a scoop of mashed potatoes.
