Description

Mini meatloaf muffins made with turkey and bacon served with creamy mashed potatoes for a delightful meal.


Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, chopped turkey bacon, breadcrumbs, onion, milk, egg, Worcestershire sauce, salt, and pepper.
  3. Mix well until combined and form into muffin shapes.
  4. Place the muffins in a greased muffin tin.
  5. Bake for 25-30 minutes or until cooked through.
  6. While the muffins are baking, prepare the mashed potatoes according to package instructions or your favorite recipe.
  7. Serve the muffins hot alongside a scoop of mashed potatoes.
