Ingredients

  • 8 ounces lasagna noodles
  • 1 pound turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and garlic, and sauté until softened.
  4. Add turkey bacon and chicken ham to the skillet, cooking until bacon is crispy.
  5. Stir in black beans, salsa, chili powder, and cumin; cook for an additional 5 minutes.
  6. In a baking dish, layer noodles, meat mixture, and cheese, repeating until all ingredients are used, ending with cheese on top.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  8. Garnish with cilantro before serving.
