- 4 chicken breasts
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 red onion, chopped
- 3 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken, zucchinis, tomatoes, and onion.
- Drizzle with olive oil, and add the Italian seasoning, salt, and pepper. Toss to coat.
- Spread the mixture in a baking dish and top with feta cheese.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh basil before serving.

- For extra flavor, marinate the chicken for a few hours before baking.
- You can substitute asparagus or bell peppers for zucchini.
