Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 1 cup sour cream
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped


Instructions

  1. In a skillet, cook the ground beef with chopped onion and minced garlic until browned.
  2. Stir in chili powder and cumin, cooking for an additional minute.
  3. Warm the tortillas slightly to make them pliable.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture, roll them up, and place seam side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake at 350°F for 20 minutes until the cheese is bubbly.
  8. Serve hot with sour cream, avocado slices, and chopped cilantro.
