- 1 onion, chopped
- 2 cloves garlic, minced

- 8 flour tortillas
- 2 cups shredded cheese
- 1 can (10 oz) enchilada sauce
- 1 cup sour cream
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
Instructions
- In a skillet, cook the ground beef with chopped onion and minced garlic until browned.
- Stir in chili powder and cumin, cooking for an additional minute.
- Warm the tortillas slightly to make them pliable.
- Spread a small amount of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the beef mixture, roll them up, and place seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake at 350°F for 20 minutes until the cheese is bubbly.
- Serve hot with sour cream, avocado slices, and chopped cilantro.
