- 1 cup Limoncello
- ½ cup lemon juice
- 1 tablespoon lemon zest

- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with Limoncello and lemon juice.
- Stir in the lemon zest and vanilla extract.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, brush the cake with additional Limoncello while it cools.
- Serve with whipped cream or a dusting of powdered sugar.
