Ingredients

  • 3 large egg whites

  • 1/2 cup granulated sugar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar, then cut in butter until it resembles coarse crumbs.
  3. Add egg yolk, lemon zest, and lemon juice, mixing until a dough forms.
  4. Press the dough into mini muffin tins to form cups.

  6. While the cups cool, beat egg whites and cream of tartar until frothy.
  7. Gradually add granulated sugar, continuing to beat until stiff peaks form.
  8. Fill cooled cookie cups with lemon curd and top with meringue.

  10. Let cool before serving.
