Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and softened butter, and mix until crumbly.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. Bake for 15 minutes until lightly golden.
  5. In another bowl, beat together cream cheese, eggs, powdered sugar, lemon juice, and lemon zest until smooth.
  6. Pour the cream cheese mixture over the baked crust.
  7. Bake for an additional 25-30 minutes until set.
  8. Allow to cool, then refrigerate for at least 2 hours before serving.
