- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 2 large eggs
- 1 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and softened butter, and mix until crumbly.
- Press the mixture into the bottom of a greased 9×9 inch baking pan.
- Bake for 15 minutes until lightly golden.
- In another bowl, beat together cream cheese, eggs, powdered sugar, lemon juice, and lemon zest until smooth.
- Pour the cream cheese mixture over the baked crust.
- Bake for an additional 25-30 minutes until set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
Notes
- For a sweeter bar, adjust the amount of powdered sugar to taste.
- Serve chilled for the best flavor.
