- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 tablespoon lemon zest
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 large egg
- ½ cup milk
- ⅓ cup vegetable oil
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, lemon zest, baking powder, and salt.
- In another bowl, mix together egg, milk, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- For a sweeter muffin, add a bit more sugar.
- Substitute frozen blueberries if fresh are not available, just be careful not to overmix.
