Ingredients

  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, lemon zest, baking powder, and salt.
  3. In another bowl, mix together egg, milk, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes

  • Substitute frozen blueberries if fresh are not available, just be careful not to overmix.
