Description

A delightful and moist cake infused with the zing of lemon and the fizzy goodness of 7UP.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ½ cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup 7UP soda
  • 2 teaspoons baking powder
  • ¼ teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon juice and zest.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the 7UP, until combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring it to a wire rack.
