Description

A delicious combination of layers of zucchini, creamy ricotta, and rich marinara sauce make these Layered Zucchini Ricotta Melts a perfect dish for any occasion.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds.
  3. In a baking dish, spread a layer of marinara sauce.
  4. Layer half of the zucchini slices over the sauce.
  5. Spread half of the ricotta cheese over the zucchini.
  6. Sprinkle with salt, pepper, and Italian seasoning.
  7. Repeat the layers with the remaining ingredients, finishing with marinara and mozzarella on top.
  8. Bake for 25-30 minutes or until the cheese is bubbly and golden.
