Description

This Keto Spanakopita is a delicious and healthy twist on the traditional Greek spinach-feta pie, featuring turkey bacon for added flavor.


Ingredients

  • 1 package phyllo dough
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 oz turkey bacon, cooked and chopped
  • 2 eggs, beaten
  • 1/2 cup onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add the spinach and turkey bacon, cooking until the spinach is wilted.
  4. In a bowl, combine the spinach mixture, feta cheese, and beaten eggs. Season with salt and pepper.
  5. Layer phyllo dough in a greased baking dish, brushing each layer with olive oil.
  6. Pour the spinach mixture over the phyllo dough and cover with more layers of phyllo.
  7. Cut into squares and bake for 25-30 minutes until golden brown.
