- 1 package phyllo dough
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 4 oz turkey bacon, cooked and chopped
- 2 eggs, beaten
- 1/2 cup onion, finely chopped
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onions until translucent.
- Add the spinach and turkey bacon, cooking until the spinach is wilted.
- In a bowl, combine the spinach mixture, feta cheese, and beaten eggs. Season with salt and pepper.
- Layer phyllo dough in a greased baking dish, brushing each layer with olive oil.
- Pour the spinach mixture over the phyllo dough and cover with more layers of phyllo.
- Cut into squares and bake for 25-30 minutes until golden brown.
Notes
- For a richer flavor, consider adding some garlic powder to the spinach mixture.
- Ensure the phyllo dough is kept covered with a damp towel to prevent it from drying out while working.
