Description
This Italian Lentil Soup combines hearty lentils with savory turkey bacon for a delicious meal.
Ingredients

- 1 cup lentils
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can diced tomatoes
- 2 cups spinach
Instructions
- In a large pot, cook the turkey bacon until crisp. Remove and crumble.
- In the same pot, sauté onions, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in lentils, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Add tomatoes and spinach, cooking until heated through.
- Serve hot, topped with crumbled turkey bacon.
Notes
- For a vegetarian version, omit turkey bacon and use vegetable broth.
- Add more spices for extra flavor as desired.
