- 1 cup all-purpose flour
- 2 large eggs
- 2 cups milk
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1/2 teaspoon vanilla extract
- 4 ounces turkey bacon, cooked and chopped
- 4 ounces chicken ham, chopped
Instructions
- In a large bowl, whisk together the flour, eggs, milk, salt, sugar, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour a ladleful of batter into the skillet, swirling to cover the bottom.
- Cook for 1-2 minutes until the edges curl, then flip and cook for another minute.
- Repeat with remaining batter, stacking the crepes on a plate.
- Once all crepes are done, fill half of each crepe with turkey bacon and chicken ham, then fold.
- Serve warm with your favorite sauce or garnish.
