Description
This moist Hummingbird Bread combines ripe bananas, crushed pineapple, and pecans, crowned with a rich cinnamon cream cheese frosting.

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 3 large ripe bananas, mashed
- 1 cup crushed pineapple, drained
- 3/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup chopped pecans or walnuts
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, beat eggs with sugars until smooth. Stir in mashed bananas, crushed pineapple, oil, and vanilla.
- Gradually mix in dry ingredients. Fold in chopped nuts gently.
- Pour batter into prepared loaf pan and bake for 60–70 minutes. Cool for 15 minutes before transferring to a wire rack.
- For frosting, beat cream cheese and butter until creamy. Add powdered sugar, cinnamon, vanilla, and salt, and beat until fluffy.
- Spread frosting over cooled bread, slice, and serve.
Notes
- Use very ripe bananas for maximum sweetness.
- Do not overmix the batter to avoid a dense loaf.
- Cool bread completely before adding frosting.
