Description

This moist Hummingbird Bread combines ripe bananas, crushed pineapple, and pecans, crowned with a rich cinnamon cream cheese frosting.

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 large ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chopped pecans or walnuts
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs with sugars until smooth. Stir in mashed bananas, crushed pineapple, oil, and vanilla.
  4. Gradually mix in dry ingredients. Fold in chopped nuts gently.
  5. Pour batter into prepared loaf pan and bake for 60–70 minutes. Cool for 15 minutes before transferring to a wire rack.
  6. For frosting, beat cream cheese and butter until creamy. Add powdered sugar, cinnamon, vanilla, and salt, and beat until fluffy.
  7. Spread frosting over cooled bread, slice, and serve.
