- 1 1/2 cups graham cracker crumbs
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 4 cups fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (165°C).
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until combined.
- Add the eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust.
- Bake for 60 minutes, or until the center is set. Remove from the oven and let it cool completely.
- Once cooled, layer the sliced strawberries on top of the cheesecake.
- In a separate bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form. Spread this over the strawberries.
- Refrigerate for at least four hours before serving.
Notes
- For a richer flavor, let the cheesecake sit overnight in the refrigerator.
- You can substitute other berries if desired.
