Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, beating until combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust.
  6. Bake for 60 minutes, or until the center is set. Remove from the oven and let it cool completely.
  7. Once cooled, layer the sliced strawberries on top of the cheesecake.
  8. In a separate bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form. Spread this over the strawberries.
  9. Refrigerate for at least four hours before serving.

Notes

  • For a richer flavor, let the cheesecake sit overnight in the refrigerator.
