Instructions
- In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until vegetables are softened.
- In a bowl, mix together the ground meat, breadcrumbs, Parmesan cheese, egg, oregano, salt, and pepper. Form into small meatballs.
- Add chicken broth to the pot and bring it to a boil. Carefully drop in the meatballs.
- Once the meatballs are cooked through, add the spinach and pasta. Cook until the pasta is al dente.
- Adjust seasoning as needed and serve hot.
